RE: How well do these dishes freeze?

Cruzgal, I use to freeze a lot of my left over dishes for my dad and I found most main dishes that do not contain pasta freeze well. Pasta tends to get mushy when frozen. Fruits get a little mushy when frozen too, they are good to add to blended drinks though. Here are a couple of web sites that cover freezing meals that you might find helpful. http://www.fabulousfoods.com http://busycooks.about.com Good luck!

RE: Should I buy a George Foreman?

I am on my second GF grill, I wore my first one out. The one I have presently has removable grill plates, which makes it very easy to clean. If/when this GF grill wears out I am going to get this one GF Grill/Waffler/Griddle Comes with 5 removable grill plates for making waffles, cooking paninis, grilling, baking, and griddle cooking I've seen a lot of people use their GF grill and cook outside on it when they are camping in an RV. I like to cook bacon in my GF grill, in fact, I am cooking up 5 lbs of bacon right now. Some is for breakfast this morning, but most of it will go in the freezer in a Ziplock baggie and I'll take out what I need when I need it and zap it in the microwave. The DH can have a BLT or bacon and eggs any time he wants. I also like to crumble up bacon on my salads. Not everyone likes a George Foreman Grill, but I sure do. I keep mine at home, not in the RV though.

RE: Mid CA 5th Bi- Annual Fall Rally - Oct. 10 & 11th 2008

No fog this morning and it got pretty warm here after the fog burned off yesterday so I am sure it's going to be warm today. It's just beautiful outside right now. There sure were a lot of people shooting off fireworks in our neighborhood last night. I think the police were too busy patrolling the beaches last night to even notice. Ray and I are going to take a ride to a big piece of property his company owns over by Mt. Madonna. We are taking a picnic lunch and our puppies. We'll do a little hiking and some exploring. Lee, nice pics! Have a good day all!

RE: Sun Tea

I found sun tea to be on the bitter side. MY DH is from the south and loves sweet tea. Best way to make sweet tea is to bring the water to a boil and add the sugar so that it will dilute. Then add the tea bags. MY MIL use to make sweet tea sooooooooo sweet, you could use it for syrup the next morning! She also made the tea extremely strong. It wasn't bitter, just strong. My DH loved it! I have modified this sweet tea for my DH. I take a large sauce pan and put about 3 cups of water in it. To that I add three packages of Sweet & Low. Once the water has come to a boil I add 8 decafinated tea bags and boil for about 2 minutes. I squeeze out all the liquid from the tea bags. In a half gallon plastic pitcher (I use my Tupperware pitcher) I add about two cups of ice and enough water to cover the ice and then I add the hot tea to the cold water adding more cold water to make a full 1/2 gallon container. The DH loves it, too sweet for my taste though.

Sharon, sorry to see Bozo go, may he rest in peace! Joel, that was a terrible doxie story! They didn't have to put him down, they could have found him a new home. Jim, please post some pics of your Chinese Crested puppy. It's a Chinese Crested dog that wins often at the Animal Planet Ugliest Dog Contest I bet a Chinese Crested puppy is so ugly, that they are CUTE!!

RE: Independence Day Menu

I have no menu planned for the entire 3-day holiday weekend. I'll be flying by the seat of my pants. We are staying home this weekend as the DH hates to travel on holiday weekends. We are going out next weekend with some friends. I am presently working on that menu. Have a good Independence day everyone!

RE: Crock Pot to pre-cook my ribs?

Like you Ladymc, I usually pre-cook my baby back ribs in the oven (never boil them) before grilling and they turn out prefect. You are right, it would heat up your RV. I have on occasion grilled my ribs to brown and sear. It also gives them a little smoky flavor and then I put them in the crock pot on high for 4 hours or on low for 6 hours. They turn out pretty good this way too! Good luck and let us know how you fixed yours and how they turned out :B

RE: Mid CA 5th Bi- Annual Fall Rally - Oct. 10 & 11th 2008

Happy 4th of July!!! Hope everyone has a safe & sane Independence Day! For those of you traveling, travel safe. I'm sure Santa Cruz will be packed this weekend, but we're staying home. One of the neighbors is having a 4th of July party and our street will be packed with cars, so I doubt if we even leave the house today. Have a good day no matter what you are doing :B

RE: Mid CA 5th Bi- Annual Fall Rally - Oct. 10 & 11th 2008

Thanks everyone. I'm really looking forward to my new job. Congratulations Judy! Glad to hear you landed that job! Just don't let it cut into your camping time. You must keep your priorities in line. I told them what dates I needed off through Oct. and they agreed I could have that time off BEFORE I accepted the job! Shelia, your secrets out! Nice to see you posting :B

RE: spicy franks

I've made hot dogs in BBQ sauce before. This is good and easy. Great for a crowd. BTW - the crock pot comes in handy for this dish. Use a crock pot liner for easy clean up. I also make an appetizer similar to this. Instead of hot dogs I use those little smoky links and my favorite BBQ sauce (you can also dice up hot dogs into bite size pieces instead of the smoky links). I have a mini crock pot that I heat & serve this appetizer in. I just set out some tooth picks next to the to the mini crock pot and people serve themselves.

RE: Mid CA 5th Bi- Annual Fall Rally - Oct. 10 & 11th 2008

Well, today is my last day of freedom :( I don't consider the 3-day weekend free time, since Ray will be home from work. I'll be cooking and cleaning all weekend. I'm sure I will hear lots of "Dear will you get me" and "Where is the ------- (fill in the blank, Ray can't find anything) :B If my drug test and background check come back without any blemishes.......... Monday, I start a new job. They also have to check my references, but so far all systems are go. This is a job I applied for last March and it was a job I really wanted. It's more customer service then sales, but it pays really well and I won't be making sales calls. I will be taking specialty orders for X-ray tubes and tracking the progress of the order. It takes about 6-10 weeks to make one of these X-ray tubes, they are machine specific, so each one is different and they are VERY VERY expensive. I will have multiple different jobs and will not spend all my time on the phone or at my computer, which seems to be a real down fall for my neck. We're staying home this weekend, with no plans of doing anything but hanging around at the house. Lee, loved the pics. Your niece is a cutie pie!

RE: Mid CA 5th Bi- Annual Fall Rally - Oct. 10 & 11th 2008

Good morning! Well looks like the fog is gonna burn off early today, it's almost clear now! So that means it's gonna be warmer today here in SC and hotter inland! The fires continue to burn in Big Sur. They are expecting the Basin fire to burn into the Big Sur fire. The Basin fire is threatening the Boy Scout camp, Pico Blanco. The news man are reporting that the camp has been around for generations. That is so true, Bruce went to camp there and so did his boys. Let's all keep our fingers crossed that it doesn't burn. The firefighters are trying soooooo hard to save it.

RE: Keeping Grease

I have a small electric griddle from Wal-mart that I fry all my bacon on with the vent hood running. I fry it completely done, ziplock bag it and stick it in the fridge. I take out what we want and nuke it for about 10 seconds and it's great - why recook it for 1 min. It will make the kitchen smell of bacon if you do it that long...but then, I don't care - I love the smell of bacon. We like our bacon cooked very crispy. If I cooked it to a crisp point before freezing it, the bacon would easily crumble into smaller pieces. Great for a salad, but not great for bacon & eggs :B

RE: Mid CA 5th Bi- Annual Fall Rally - Oct. 10 & 11th 2008

Good morning! Wow, the wind shifted yesterday and cleared all the smoke from our neck of the woods. The only smoke we could see was waaaaaaay south of us. I could actually see the SC Mts. out my front living room window, first time in about a week! Adam, so sorry to hear about your 5er Boo-boos. I hope it's not a costly repair :E Christine, sounds like you had a wonderful trip. Hope we get to see a few pics! Today we are going up to Bowling Green to have some work done on the truck (the bed it going to get sprayed) and while they are doing that we are going to visit the Corvette Museum. I WANNA GO TO THE CORVETTE MUSEUM!!!!!!!!!!!!!!!

RE: 5 most important things to bring with ya

When we ready for a trip, I make out a menu and from the menu I make out a list of food items that are needed. That way I don't over pack food or under pack either. We think of our RV as our second home and have duplicated all the important things we need and use - right down to the toiletries, bed linens and towels. I even keep an extra cell phone charger in the RV. I am responsible for packing what is needed for the inside of the RV. Here's what I pack: food clothing little red basket Our RV is in storage when not in use and my little red basket holds the things that end up in the stick house that belong in the RV. In the basket we keep a few days supply of his daily drugs (which we check before each trip). The red basket is the first thing that gets packed in our 5er.

RE: Toaster Oven

My DH is from the south and loves biscuits. I always make a big batch of them at a time and freeze the left over biscuits in a big Ziplock baggie. Whenever the DH would like a biscuit, I pull two out, wrap them up in a paper towel and microwave them for about a minute just before serving. Just like fresh and no fuss no mess, especially in the RV. Personally, I wouldn't want to give up my counterspace in my 5er to keep a toaster oven. But it sounds like it works well for you!

RE: Breakfast menu's

Here's an easy breakfast casserole. Don't forget to use the Reynolds crock pot liners for easy clean-up! Crock Pot Morning Casserole 1 bag (32. Oz.) Frozen hash brown potatoes 1 lb. Of bacon diced, cooked and drained or 1 lb. or cooked cubed ham 1 medium diced onion 1 green bell pepper diced 1 ½ cup shredded cheddar or Monterey Jack cheese 1 dozen eggs 1 cup milk 1 tsp. salt 1 tsp. pepper Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon (or ham). Then a layer of onions, green peppers and cheese. Repeat the layering process two or three more times ending with a layer of cheese. Beat the eggs, milk, salt and pepper together. Pour over the Crock-pot mixture, cover and turn on low. Cook for 10 –12 hours. For more crock pot breakfast ideas visit this web site. Breakfast Crock Pot Recipes Heck you can even make oatmeal in a crock pot! Another idea is to have a continental breakfast, with maybe some cold breakfast cereals, assorted fruit, yogurt, maybe some bagels and or sweet rolls or breads you bake yourself.

RE: Keeping Grease

I cook my bacon at home until it's almost done. I use my George Forman Grill and cook 5 lbs of thick bacon at a time. Once cooled I put it in a big Ziplock baggie and freeze it. I pull out a few pieces at a time when needed and microwave for about a minute. Not only does this save time, but our 5er doesn't smell like bacon afterward and I don't have to deal with the grease in the RV. At home I do collect the bacon grease and pour it into a jar once it's cooled and close it with a lid. Then I toss it out. This is the way our local waste management has asked us to dispose of grease. My husband's family always reused their bacon grease for everything. Heck, they even spread it on their biscuits instead of butter. Of course, they all died at a relatively young age of heart attacks too.
